Among the culinary delights of the Karst region, the most famous are teran wine and prosciutto. Credit for this is given especially to the event Teran Wine and Prosciutto Festival. Today, the Teran Wine and Prosciutto Festival promotes the Karst region and is the major event that celebrates this wine region.

Teran wine

According to Plinius, the Roman historian, the Roman empress Julia (Giulia), wife of Augustus, supposedly reached a respectable age of 82 years because she used to drink wine from Karst.

Teran, the fiery red thick wine, is one of the most important products of the Karst soil, also known as “terra rossa” or “jerina”. Teran, a genuine Slovenian wine with desig- nated origin, is produced from Refosco vine grapes. The medicinal features of teran are the result of its numerous mineral substances and lactic acids, but it is also known for its distinctive aroma which resembles the scent of wild berries.

Teran is a young wine of full taste; with maturing, its characteristics are completely changed and gradually become more similar to red wines from around the world - such wine is called TERANTON. The kind of teran that is made from the best grapes, suitable for wine of superior quality, is known as the “izbrani teran PTP” (selected teran PTP). TERAN PTP is dry wine, served at room temperature together with pro- sciutto, spicy cheese, venison meat, dry-smoked meat products and red meat.

The prosciutto

The term prosciutto refers to dry-cured ham with both bones – the leg bone and the shank bone – muscles, fat and skin. In Slovenia, the most renowned prosciutto is the Karst prosciutto; however, there are a lot of different, highly prized types of prosciutto produced in the world.

In addition to prized variations of Italian prosciutto, mainly from central and northern regions of Italy (Parma, San Daniele), it is also produced in Croatia, Serbia, Bosnia and Herzegovina and Montenegro. World-renowned Spanish prosciutto – Pata Negra – made from black Iberian pigs is one of the most expensive ones.

The Karst prosciutto is characterized by its greater maturity, fullness of its flavour, intense pink-red colour, sweet-salty taste and rich aroma. Only those prosciuttos that are traditionally dry-salted and go through a lengthy process of drying and ageing can be labelled with the protected geographical indication. The logo Karst prosciutto and Slovenian and European quality label mark all Karst prosciutto products.

The taste of Karst

In Karst, the Slavic, Germanic and Romanic cuisines have been interlaced for centuries. On the basis of this combination, the Karst cuisine - full of taste and Mediterranean freshness - was born. The Karst cuisine is seasonal, enriched with herbs, wild plants and fruit.

Each festival is distinguished by a certain pastry, for example the famous Karst “štruklji” (a type of dumplings), potica (tradi- tional Slovenian cake) and apple strudel. Venison and lamb’s meat are prepared in a thousand different ways. On cold days when the harsh bora wind is blowing, enjoy the warmth of different soups and minestrones. However, do not leave Karst without tasting the delicious Karst “jota”, which is a thick minestrone soup with sauerkraut or turnip, potatoes, beans.
